Frozen pineapples are food products obtained by sorting, peeling, coring, trimming and cutting sound, ripe fruit of Ananas comosus (pineapple) and stabilizing them by rapid freezing so that the entire mass reaches and is maintained at a temperature typically at or below –18 °C, thereby arresting enzymatic activity and microbial growth while preserving texture, flavour and nutritional quality. In commercial practice the term covers individually quick frozen (IQF) pieces such as chunks, dices, tidbits, wedges or slices, as well as frozen pineapple blocks, purées or broken pieces intended for industrial use in beverages, bakery, dairy, confectionery and prepared foods; products may be packed unsweetened or with added sugars, fruit juices or permitted food acids and antioxidants, but contain no foreign matter and meet applicable standards for varietal authenticity, minimum fruit content, defects, soluble solids and microbiological safety.
