Starch is a polysaccharide, a polymeric carbohydrate consisting of a large number of glucose units linked by glycosidic bonds. Pure starch is a white, tasteless, odorless powder, insoluble in cold water or alcohol, with the molecular formula (C6H10O5)n. Starch can be divided into amylose (sugar starch) and amylopectin (glutinous starch) due to the difference in the coiled helical structure of intramolecular hydrogen bonds. The former is an unbranched helical structure; the latter is composed of 24~30 glucose residues connected end to end by α-1,4-glycosidic bonds, and the branched chains are α-1,6-glycosidic bonds. Starch processing and products are obtained by using corn, sorghum, wheat and other grains and potato, sweet potato, cassava and other potato crops as raw materials, soaking and grinding, and separating and removing non-starch substances such as protein, fat and cellulose. Starch products are products made of starch as raw material through mechanical, chemical or biochemical processing.
